OAT BRAN THUMBPRINT COOKIES

¾ cup margarine

1 cup all-purpose flour

2 egg white

½ teaspoon vanilla

¼ finely chopped walnuts

¼ teaspoon salt

1 cup oat bran

½ quick–cooking oats

Preserve

½ cup brown sugar

1 tablespoons oat bran

 

 

Heat oven to 375°.  Mix margarine, brown sugar, vanilla and egg whites.  Stir in 1 cup oat bran, flour, oats, and salt.  Shape dough into 1¼-inch balls.  Mix in walnuts and 2 tablespoons in separate bowl.  Roll balls in walnut mixture.  Place 1 inch apart on un-greased cookie sheet.  Press thumb in center of each ball.  Fill thumbprint with preserve.  Bake until light brown, about 10 minutes.  Remove immediately from cookie sheet.  Aprx. 3 dozen.
